This course aims to provide detailed knowledge on the complex microbial communities that inhabit the human gastrointestinal tracts, their contribution to digestion, modulation of the immune system, gut homeostasis and etiopathogenesis of both gastrointestinal and systemic diseases. In particular, teaching will be focused on interaction between food and gut microbial eubiosis, and on the application of advanced methodologies for evaluation and management of feeding and nutrition. Teaching activities will be performed to facilitate the improvement of students autonomous judgment and self-assessment skills, and communication skills enabling them to establish profitable interaction with health care personnel, food producers, small- and large-scale commercial chains representatives, “special” consumers and their association (i.e., patients affected by Celiac Disease, Diabetes, Atopy, etc.).
