The student acquires knowledge and skills on the essential EU and national legislation, including also food legislation requirements related to Food Business Operator and the Official Control activities, including Certifications. Basic knowledges are acquired concerning the legislation sources at european and national level, including relationships between legal acts and definitions. The framework of the international institutions and agreement (WTO, SPS and TBT agreement, DSU, Codex Alimentarius Commission) is analyzed according their relationships with the food legislation of the European Union. The fundamentals of the EU food law established by Regulation 178/2002 are analysed, considering horizontal principles of the food legislation and the obligations of the FBO, the EFSA tasks and organization, the food safety procedures. The rules on hygiene and official controls are also discussed, including their enforcement by FBOs and Competent Authorities.
The student''s training takes place in an informed context of the relationships and responsibilities between stakeholders in the food chains, including the consequences for public health, the context of the international market, society and consumer expectations. The student is well aware about the relevant responsibilities and roles of the Food Business Operator and the Competent Authority in the application of the regulatory requirements.
