the course aims at giving the student enough competences and knowledge to analyse musts and wines composition through the explanation of the main chemical compounds forming the oenological products of micro-organisms metabolism and of the chemical reactions involved in their dynamics evolution. The student should get competences in order to properly evaluate analytical data and manage the methods concerning legal rules to analyse and justify technological choices in oenological field to carry on a constant and necessary updating.
