Learning outcomes of the course unit: The course of Food Microbiology provides students with knowledge of intrinsic, extrinsic and implicit factors regulating the colonization, development and selection of microorganisms in food ecosystems. It studies the biology, ecology, and metabolic activity of microorganisms related to the food industries; the microbiology of food products; the biotechnology of starter cultures; the food safety management; the improvement of the nutritional quality of foods.
